Chilopetaki belongs to the category of small pasta. It has a square shape and is the most "famous" and oldest pasta in the Peloponnese. The dough is created from an excellent quality mixture of hard and soft flours, full fat sheep's milk, eggs and salt. It can be cooked as a white or colored soup, to accompany red or white meat in the oven and in the stew, or as a pilaf. Traditionally the chilopetaki accompany the braised traditional rooster.
