Vines: Average age 12 years old, planted in sandy, light soil derived from parent limestone. The management and the development of the ecosystem is entirely based on Bio-Agricultural practices (the vineyard is under the process of certification)

Yield : average 1,55 tn/1.000 m2

Harvest period: 20-25th August. The grapes are left under the sun for 12 days aiming at the condensation of their juice 

Maturation and Cellaring: 5 months periodic “batonnage” on light wine lees in stainless steel tank. Each vintage is kept in the cellar for 8-12 months before its launch in the market

Ageing potential: 8-10 years

Analysis: 15.3% alc. by vol., residual sugars 61.5 g/l, total acidity 6.2 g/l in tartaric acid, pH 3.59

Serving temperature: 9-11 °C

Recommended pairings: blue cheese such as “Roquefort”, Greek traditional cheese “Ladotyri”, desserts based on bitter chocolate
