The cheese company Mystakelli Dairy Products Co. was founded in 2015, operates in privately owned facilities and is headquartered in Mantamados, Lesvos. Continuing the tradition that began in 1962 in his traditional cheese factory Stratis Mystakellis and then expanded his son John, since 2016 the new administration is on the market with oil cheese, gruyere mizithra, butter and sheep yogurt, while in just two years the company managed to increase its production by 20%.
The components of the blessed Lesbian land, the mild Mediterranean climate, the rich variety of plants and herbs and the pesticide-free flora, the abundant sunlight, the saltiness of the sea, the sheep and goats free grazing of the special M Excellent quality milk with unique aromas and taste characteristics. The Mystakelli cheese dairy in Lesvos receives daily aromatic local goat’s and sheep’s milk from lesbian animals, free range, from producers of Mantamados. Thanks to this, the knowledge and the taste of the people of the company, their feta cheese has been awarded for its hard galactic with nice acidic taste with the World Cheese Awards 2019 – 2020. Their graviera has won the OLYMP AWARDS Gold 2020 while the fresh , creamy mizithra and their thick dried mizithra have managed to stand out for their taste and aroma.
Their head, as the Lesbians call the ladotyri, matures for at least 3 months and usually up to 6 months, is not paraffinized, remains in special chambers and acquires a complex, nutty taste. Some heads are cut into slices, vacuum packed in local olive oil, and thus mature for another 45 days before being placed on the market. Rich, baked, sweet and spicy together, ladotyri, is a unique cheese in Greece and the world.
