Greek organic garlic which undergoes a slow maturation under controlled conditions. During this time, its main ingredient, allicin, is oxidized, changing its color to black.
The intense taste and smell of garlic is replaced by a caramelized sweet umami taste and a subtle smoky aroma reminiscent of truffle oil.
Also, its cloves turn from hard to gelatinous. Some cloves can be so soft that they can be easily spread on bread.
Available in whole bulbs, peeled cloves or powder, in small retail packs and in professional packs
