BOURAZANI MOUFLON HAM

Mouflon dry-cured meat from the leg, known as the most tasteful meat in the world.

The very best hams (boneless) BOURAZANI are made from Mouflon that roam freely at the oak forests, property of Tassos family, fed with grasses, herbs, roots, cereals and leafs until September. From October to January, during these four (4) months, they eat acorns, the mouflon’s favourite acorns come from the tree different spices of oak, Quercus frainetto, cerris & pubencens. Their acorn-based diet insures their meat exceptional aroma and flavor and provides a medium melting point (around room temperature) for their fat. Those are the basic key elements in the sublime flavor of a great BOURAZANI Mouflon.

The BOURAZANI Mouflon are cured in salt for approximately fifteen (15) days, washed with local red wine (D.O.P) and then rested for at least one month. After this procedure our products get drying process for four months (4) and during that time BOURAZANI Mouflon starts to develop the aromas that characterize the perfected product, right before they get covered in wax and enter the curing cellars where they hang for up to one year. BOURAZANI Mouflon products can have ‘HALAL’ certification.
