Wild Extra Virgin Olive Oil

This high-quality virgin olive oil of the “Edia” line of products is produced from wild olives of an indefinite age indigenous to Deliana, Kolymvari, Chania. The olive trees are located in a remote area and olives are harvested by hand. The green olives are harvested early between 4 and 30 October. Extraction takes place four hours aster harvest, resulting in an acidity of 0.25. Part of the rich phenolic content of “Edia” olive oil comes from oleacin and oleocanthal, which research has shown that they have cardioprotective and neuroprotective properties. Also, these phenols are remarkably effective in treating Alzheimer's. The olive oil has a rich, fruity (5.5) and spicy (4.3) taste, with a bitter astertaste (3.8) that provides unique benefits.
