The Koroneiki variety is shaped by the raw landscape and powerful climate of southern Crete. Grown in a region defined by abundant sunlight, dry winds, and sharp temperature contrasts, the olive trees thrive under demanding conditions that naturally concentrate flavor and vitality, for more than 50 years. The rocky, mineral-rich soils of the mountain Psiloritis restrict excess growth, encouraging low yields and exceptional fruit quality.

Produced as a single-variety extra virgin olive oil, Volakas reflects both its origin and its cultivar with clarity and intensity. The oil is full-bodied and expressive, opening with fresh green aromas reminiscent of wild herbs and olive grove vegetation. On the palate, it develops a confident bitterness and a lively, peppery edge—hallmarks of Koroneiki olives and an indicator of its naturally elevated polyphenol profile. Gently cold-extracted through purely mechanical processes, it presents a radiant golden hue, a silky mouthfeel, and a complex yet restrained aromatic profile.

Volakas is one of the few olive oils worldwide to have a certified health claim on its label in accordance with EU regulation 432/2012, as it contains very high amounts of phenols.
