Babounis - Arseniko Naxou

The cheese arseniko Naxou is an exquisite hard cheese. The distinctive flavor and uniqueness of the Naxos arseniko cheese are due to the fact that the milk is not boiled and thanks to that many of the enzymes remain alive, so the shepherds say that it is a "live cheese". As the cheese ages its flavor changes and becomes more spicy and aromatic. The name Arseniko in Greek means "male" and was found in old citations dating back to 1000 AD.
