Chimera Still, is a wine with moderate intensity, gold color and lemon hues. Taste gives us the feeling that it has matured some months in a barrel ,but essentially the saffron of Kozani, comes to give the historical white variety Savvatiano – which is the base wine, the color, aromatic and flavorful complexity.
The aromatic intensity is high with the aromas of Savvatiano and saffron, playing, alternating and finally balancing harmoniously. Aromatic complexity characterized by bergamot, citrus, lime, chamomile, honey and notes of iodine, tempt us to follow and open the appetite for dishes primarily Asian cuisine and not only!
Flavorfully the wine has a full body, rich in Varietal aromas and the saffron of Kozani. More specifically, intense flavors of lemon blossoms, citrus, lime and some more mature fruits, such as pineapple and peach, with more intense elements of honey and the slightly spice flavor of the Kozani Saffron, is dominating. The acidity is medium to High, able to break any oiliness that may be present, in the accompanying dishes, but also to keep in desire the palate to want to enjoy another sip! The aftertaste is long with the elements of yolk and ripe fruit remaining for quite some time.
Combine it with platters of raw shellfish with lemon juice, fish in sashimi style, salads with smoked fish and citrus dressing, varieties of sushi, sweet and sour chicken or pork, risotto or spaghetti with seafood and Saffron of Kozani, shrimp and vegetables satay with spicy mayo, barbounaki savoro or fried in the traditional way, fish with fat, baked in the oven, pappardelle with salmon and white light sauce – especially with strong element of iodine(sea), sweet and sour or sweet-spicy and especially based on Asian cuisine.

Terroir:
The vineyards are located in the area of Keratea, but also in the wider area of Lavreotiki( Attica region )
The wine-growing zone of the region is significantly differentiated from the rest of the areas as the vineyards are located between an altitude of 200-350m at the foot of the Paneion mountain and are surrounded by the sea.
With sandy clay soils with a limestone background, while as we approach Lavrio the limestone alternates with shale and the intense minerality of the area, due to the medals differentiate our vineyards.
The microclimate of the area with the mild characteristics of the seasons of the year in combination with the air marine masses form an excellent environment for the cultivation and sustainability of the grape.
The vineyards are spread over an area of 200 acres . They are mainly linear with a low acre yield of 300-400 kg per acre. Most vines are 40-50 years old.
