Origin: Vineyards in the Stamata area, northern Attiki, at 420m altitude

Soil: Sand and clay, with high water capacity

Grape Variety: Savatiano

Harvest: Second half of September

Vinification: Grapes are handpicked and transported in small crates, put in cold storage overnight, at 6 οC. From there, they are de-stemmed, crushed and then gently pressed in our Bucher pneumatic press. Static debourbage follows and alcoholic fermentation takes place in stainless steel tanks, for approximately 20 days, at controlled temperatures of 14-16°C, using Torulaspora Delbrueckii and Saccharomyces Cerevisiae yeasts. Sur lie treatment for 16 weeks, with battonage on a daily basis for a month and 2 times per week for the other three months.

Ageing Potential: 2-3 years

Tasting Notes: Bright white- yellow colour. A pleasant floral nose, aromas of lemon blossom, chamomile, citrus and lime dominate. Herbal and delicate on the palate, with a refreshing acidity.

Food pairing: Ideal for green salads with fruits, baked fish and chicken in lemon sauce and turkey fillet. Serve at 12οC.
