Classification: Protected Geographical Indication Northern Slopes of Mt. Pendeli

Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 420 metres

Soil: Sand and clay, gently sloping

Grape Variety: Chardonnay

Microclimate: Sufficient winter rainfall, regular snowfalls and cool, dry summers

Harvest: August 8th

Vinification: Grapes are handpicked and transported in small crates, put in cold storage overnight, at 6 οC. From there, they are de-stemmed, crushed and then gently pressed in our Bucher pneumatic press. Static debourbage follows and alcoholic fermentation takes place in stainless steel tanks, for approximately 18 days, at controlled temperatures of 12-14°C. Sur lie ageing treatment for 2 months.

Ageing Potential: 2-3 years

Tasting Notes: Straw color with grey highlights. Typical Chardonnay aromas on the nose, ripe fruit, white peach, melon and banana. Fruity and balanced mouth with crunchy acidity and a lemony aftertaste.

Food pairing: Ideal for fish, grilled chicken pasta dishes with vegetables and white sauces, and soft cheese. Serve at 8-10οC.
