With faith in tradition and respect for the bee, I produce the renowned Psarian Thyme Honey. A honey that was awarded a Great Taste star in 2019, where you can taste the entire Aegean. The intense fragrance of the dry, island thyme, the saltiness from the sea breeze reminiscent of salted caramel, and the sweetness that transports you to the beaches of Psara in August.

In line with the philosophy that "nothing should go to waste," in 2021, I established my small-scale production facility, where, based on the last unmarketable honey of the harvest, I create handmade traditional and non-traditional products of Psara in limited quantities. At the same time, from the few almond trees that grow on my family’s land, I collect almonds to produce the traditional wedding sweet of Psara, the White Sweet or Bitter Almond Spoon Sweet. The small-scale production facility was created through the "Agroanexili" program by the organization New Agriculture-New Generation, with the support of the Stavros Niarchos Foundation.

In 2023, our honey was certified as organic by Bio Hellas, always with the aim of offering you the best. To this day, it remains the only certified organic thyme honey from Psara.
